Jan 31st - Feb 7th 2024 - Q&A1

Which is the enzyme that exists in your saliva that turns white flour into sugar on the way to the stomach?

a) Amylase
b) Trypsin
c) Lipase
d) Pepsin

Answer is Amylase.  It starts turning starches like flour, white rice, pasta into sugar before it even gets tot the stomach.  If you chew and keep a piece of white bread in your mouth longer than usual it will start to taste sweeter the longer you keep it in your mouth because you can taste the amylase turning the flour into sugars.
